The association of registered nutritionists (hereinafter referred to as the “registered nutritionist association”) active in Ebetsu City and its neighboring areas has a history of 50 years of activities this year. The university also participates in the activities of the Registered Nutritionist Association. Over the past 22 years, as part of its community activities, the association has conducted 97 basic cooking classes for middle-aged and older men with little cooking experience. Since many of them wanted to learn how to cook even with the coronary disaster, the classes were held while taking precautions against infectious diseases. There were 16 participants per session, mostly in their 60s to 70s. The menu was prepared by a registered nutritionist, taking into consideration the season and preferences. The registered nutritionist talked about the nutrients contained in the ingredients and gave cooking instructions. The number of times the menu was prepared was 49 for “Japanese style,” 4 for “Chinese style,” and 44 for “mixed style. Ingredients used were “fish” 32 times, “meat” 18 times, “vegetables and fish” 4 times, and “vegetables and meat” 23 times.
